We like to think that cooking Seggiano’s Red Lentil Tagliatelle is an art rather than an exact science, depending on variables like the volume of water or heat level used. Generally, we recommend simmering in salted water for four minutes, stirring occasionally and checking until it is al dente – just soft enough to bite through. After draining, this pasta will continue to soften a little.
