London Apron’s Plant Based Raspberry Meringues are made with 100% natural, vegan ingredients.

Silvina and her team use aquafaba (aka Chickpea water) to create the light and airy meringue consistency, while dried raspberry powder gives a luscious berry flavour, and beetroot enhances the stunning baby pink hue.

These little sweet delights taste just as delicious as they look!

Cooking Tips

Make a delightful ‘Vegan Eton Mess’ by serving with fresh strawberries and coconut cream or enjoy them on their own.

How to make:

  1. Pop a can of coconut milk in the fridge before bed
  2. The next day, open the can and scoop out the thick coconut cream at the top and discard the liquid. Add 2-3 tbsp sugar and whip into soft peaks
  3. Pile up crunchy London Apron meringues, lashings of sweet coconut cream, strawberries (optional) and serve.
