Silvina and her team use aquafaba (aka Chickpea water) to create the light and airy meringue consistency, while completely natural ﬂavourings provide the sweet, playful taste of candy ﬂoss, and butterﬂy pea makes them a beautiful bright blue. A touch of vanilla extract completes the recipe.

How to make:
- Pop a can of coconut milk in the fridge before bed
- The next day, open the can and scoop out the thick coconut cream at the top and discard the liquid. Add 2-3 tbsp sugar and whip into soft peaks
- Pile up crunchy London Apron meringues, lashings of sweet coconut cream, strawberries (optional) and serve.
